Doesn't jam last forever if it is sealed right? Okay - maybe not totally forever... but a long time... mmmm... I love your jam... oh - and my mom wanted me to let you know that she is probably still laughing about Kyle... god that kid is funny!
The theory is that it lasts a year. Some say six months. It depends on the jam, and the canning method. I know that my jelly from the first year is not edible now, but it was only sealed with parafin. However, provided things look AND smell good, I'm not overly worried when it comes to boil-sealed jams. I might put a limit on two years.

I will have to really look at my jar count from now on and not go too over board. I just like making jam - something about it makes me smile - and that is important! :)
